Saskatoon Berry Birch Syrup Roast


One moose or pork roast
Birch syrup – approximately 1 cup
2 cups Saskatoon berries
Two whole bulbs of garlic


  1. Pre-heat oven to 325 F
  2. Place a roast in a roasting pan with a lid
  3. Pour birch syrup over roast
  4. Sprinkle Saskatoon berries over and around roast
  5. Separate garlic into bulbs or cut into large chunks and sprinkle on and around roast
  6. Place lid on roasting pan.
  7. Roast in oven, with cover on, for 2- 3 hours, depending on how well done you like your roast.
