Did you know?

Some fresh vegetables lose a surprising amount of nutrition within the first week after harvest….

For example:  75% of Vitamin C and 47% of folate is lost in spinach just 1 week after harvest, even if refrigerated.  77% loss of Vitamin C for green beans.
